Tender chicken is marinated in the vinaigrette, then paired with roasted vegetables and crisp greens for a satisfying dish that’s light, fresh, and full of classic Italian flavor. The avocado oil, white balsamic vinegar, and blend of Italian herbs in the vinaigrette bring balance and depth, making it perfect for both marinating and dressing the salad.

Every forkful combines juicy chicken, roasted vegetables, and crisp greens tossed in a light vinaigrette that ties everything together beautifully.
Serves: 6–8 persons
Ingredients:
- 2 lbs boneless chicken breasts
- 1 zucchini, sliced
- 1 red bell pepper, sliced
- 1 yellow squash, sliced
- 1 cup cherry tomatoes
- 6 cups mixed salad greens
- 1/4 cup shaved parmesan cheese
- 1/4 cup toasted pine nuts (optional)
- Salt and black pepper to taste
- 1/2 cup Brick House Italian Garden Vinaigrette
Procedure:
- Place chicken breasts in a bowl or resealable bag and pour in 1/4 cup of the Italian Garden Vinaigrette. Marinate for at least 30 minutes or up to 4 hours.
- Preheat oven to 400°F.
- Toss zucchini, squash, bell pepper, and cherry tomatoes with 2 tablespoons of the vinaigrette. Spread on a baking sheet and roast for 15–20 minutes until tender.
- Grill or pan-sear the marinated chicken over medium heat until fully cooked (about 6–7 minutes per side). Let rest for 5 minutes, then slice.
- In a large bowl, combine salad greens, roasted vegetables, and sliced chicken.
- Drizzle with the remaining Italian Garden Vinaigrette, toss gently, and top with parmesan and pine nuts.
